The unique heartnut - also known as juglans ailantifolia - is a Japanese variety of the walnut with a wonderfully buttery and creamy taste. The meat of the heartnut is characterized by a mild and sweet walnut flavour without the bitter aftertaste of conventional walnuts, and heartnuts have a soft and smooth texture. These nuts are named for their perfect heart-shaped shells. Although the heartnut is not yet well known in North America, their spectacular taste, along with the fact that they grow well in North American climates, suggests that you are sure to see more of them in the future.
